Super Healthy Banana Nut Muffins with Streusel Topping

Lately it’s been a bit tricker to come up with recipes that I can fit into my pre-contest macros. Everything I bake is always healthy but the closer I get to my competition the more I have to “tighten” up my diet. That being said, I was nothing short of thrilled after coming up with this recipe! I recently got a request for a cleaned up Banana Nut Muffin recipe and I couldn’t be happier with the result! 

These muffins are flour free, sugar free and clock in at a mere 130 calories, streusel topping and all! I was honestly shocked to realized these were some of the best Banana Nut Muffins I’d tasted! Just goes to show that simple and healthy doesn’t always mean boring and bland =)

Super Healthy Banana Nut Muffins with Streusel Topping

Serves: 12 muffins
Gluten-free, sugar-free and protein packed!
Ingredients
  • 1 cup Gluten-free Rolled oats, ground to flour
  • 1 cup vanilla protein powder ~82g (I used Trutein Vanilla)
  • 2/3 cup Truvia baking blend (or sweetener of choice)
  • 2 tsp Baking Powder
  • 1/4 tsp ground cinnamon
  • 1/4 tsp Salt
  • 1 cup mashed banana (the browner the better, around 2 bananas)
  • 3/4 cup Unsweetened Vanilla Almond Milk
  • 3 tbsp Coconut Oil, melted
  • 1/2 tsp Pure Vanilla Extract
  • 1 Egg
  • 1/2 cup unsweetened almond milk (you may need to add a bit more depending on the type of protein powder used)
  • 45g Chopped Walnuts

Streusel Topping:

  • 6 tbsp Gluten-free Rolled Oats, ground to flour
  • 2 tbsp Truvia baking blend (or sweater of choice)
  • 1/4 tsp ground cinnamon
  • 3 tbsp Light Butter Spread (I used Balade Brand from Trader Joes)
Instructions
  1. Preheat oven to 375 degrees and line a muffin tin with paper or silicone liners.
  2. Mix all dry ingredients (through salt) in large bowl.
  3. In medium bowl, mix remaining wet ingredients (excluding streusel topping).
  4. Combine wet and dry ingredient, mix thoroughly until no lumps are present.
  5. Divide batter into 12 muffin cups.
  6. Next, combine all streusel ingredients until lumpy. Chop the butter into small and is your hands to combine well.
  7. Sprinkle over muffins.
  8. Cook for 20-22mins until center is no longer gooey.
  9. Tip: After the muffins have been baking for ~15mins I cover with aluminum foil to prevent the tops from becoming too brown.
  10. Enjoy!
