Lately, it has become a bit of a tradition in our house to start off the weekends with a special breakfast. The weekdays get so crazy that we rarely have the extra time to spend cooking. Being able to enjoy a warm breakfast and a big ole’ cuppa coffee feels so luxurious (if only we could do this everyday)! 

For these special breakfasts, all I want is big serving of comfort food. For a while I was on a protein pancake kick, but recently I’ve switched over to waffles.

 

As usual, I did a lot of experimenting with different variations of flours, proteins powders and other random additions until I came up with the perfect combo. I wanted my waffles to not only have amazing nutritional facts but to taste amazing too.

 

Nice to have something other than egg whites and oatmeal to fill your morning macros, huh? 😉

The Perfect Protein Waffles

Yield: 1 large waffle

Serving Size: entire recipe

Ingredients

  • 1/3 cup rolled oats
  • 1/2 scoop vanilla protein powder (a blended protein like Trutein works much better than pure whey)
  • 1 tbsp coconut flour
  • 1/2 tsp baking powder
  • 1 tbsp greek yogurt
  • 1/4 cup egg whites
  • 12 drops of liquid stevia (I used SweetLeaf Vanilla)
  • 1-2 tbsp water (will vary depending on the type of protein you use, so it's best to start with less and and more as needed)

Instructions

  1. Preheat waffle iron, coat with nonstick spray
  2. Meanwhile, blend all dry ingredients
  3. Add in wet ingredients, blending well
  4. Pour onto waffle iron and cook 6-8 minutes, or until golden grown and crunchy
  5. Enjoy!

    Hi, thanks for sharing this recipe! how many grams are there in a scoop? Every company uses their own scoop size, ranging from 12 to 32 grams!

    • Hi Julia! Good question, Trutein uses 34g per scoop. Hope that helps!

    I know this is an old post, but I just made these today and they were perfect!! A lot like a regular waffle and so much better than other “protein waffle” recipes I’ve made! I didn’t add any stevia bc I prefer to add sweet things on top when it’s done. Thanks for the recipe!
