Lately, it has become a bit of a tradition in our house to start off the weekends with a special breakfast. The weekdays get so crazy that we rarely have the extra time to spend cooking. Being able to enjoy a warm breakfast and a big ole’ cuppa coffee feels so luxurious (if only we could do this everyday)!
For these special breakfasts, all I want is big serving of comfort food. For a while I was on a protein pancake kick, but recently I’ve switched over to waffles.
As usual, I did a lot of experimenting with different variations of flours, proteins powders and other random additions until I came up with the perfect combo. I wanted my waffles to not only have amazing nutritional facts but to taste amazing too.
Nice to have something other than egg whites and oatmeal to fill your morning macros, huh? 😉
