Let me start by saying this stuff is amazing! After last weeks recipe involving cookie dough, I wasn’t quite ready to move on. I kept thinking how awesome it would be if I could have a big square of cookie dough after a workout. The only problem is I wanted it to be packed with protein, contain no sugar or oil and still taste like the real thing.  A few experiments later and this recipe came to life =)

I love this recipe because I can make a big batch, store them in the freezer and just pop a couple out when I’m craving something sweet. Who doesn’t want to have  big batch of cookie dough to snack on without guilt (especially when they are less than 100 calories a piece)? The dark chocolate chips taste wonderful but they are completely optional depending on if you want the recipe to be sugar free. Personally I like a bit of chocolate, but the fudge still tastes awesome without them 😉

Ingredients
  • 90g vanilla protein powder (I used Trutein Vanilla)
  • 1 1/2 cups Chickpeas (Garbanzo Beans)
  • 1 tsp Ground Cinnamon
  • 1/2 cup Unsweetened Vanilla Almond Milk
  • 2 Tbsp Xylitol
  • 20 drops vanilla liquid stevia
  • 2 tsp Pure Vanilla Extract
  • 1/2 cup Almond Butter
  • 1/4 tsp sea salt
  • 1 tsp baking powder
  • *optional: 3/4 cup Dark Chocolate chips
Instructions
  1. Rinse and drain chickpeas thoroughly
  2. Combine all ingredients (except chocolate chips) in a food processor until well blended
  3. Fold in chocolate chips
  4. Spray a 24 mini-muffin pan with non-stick spray, divide dough among cups
  5. Freeze until firm (at least a couple hours)
  6. When ready to serve, let thaw for 5-10 minutes depending, on if you want more of a cheesecake or fudge consistency
  7. Enjoy!
