Protein Pancakes with Healthy Blueberry Cheesecake Frosting

Blueberry Protein Pancakes

The perfect basic protein pancakes recipe that never fails.. and this time I made it even a bit tastier with some healthy Blueberry Cheesecake Frosting!

These pancakes cook up super fluffy and are so easy to make. Combine them with the Blueberry Cheesecake Frosting and you cant go wrong! Another healthy breakfast that will get you through that tough workout and still taste amazing =)

Protein Pancakes with Healthy Blueberry Cheesecake Frosting

This recipe makes 3 palm size pancakes. If you are feeling extra hungry or want more than a standard serving of protein, you can double the recipe.
Ingredients
  • For the Pancakes:
  • 1/3 cup vanilla protein powder (~34g)
  • 2 tbsp oat flour or oat bran
  • 1/2 tsp cinnamon
  • 2/3 tsp baking powder
  • 1/8 tsp salt
  • 1/2 tsp vanilla extract
  • 1 tbsp Xylitol or 1 packet Truvia
  • 1/3 cup unsweetened vanilla almond milk
  • For the Frosting:
  • 2 tbsp plain, non-fat greek yogurt (vanilla would taste great also)
  • 17g nonfat or less fat, cream cheese
  • 1 tbsp Xylitol or 1 packet Truvia (use more/less depending on how sweet you like your frosting)
  • 1/3 cup blueberries
Instructions
  1. To Make Pancakes:
  2. Combine all dry ingredients in a bowl, next stir in wet until combined
  3. Drop by the spoonful over a oiled pan, medium heat
  4. Cook until golden brown
  5. Let cool on a wire rack
  6. To Make Frosting:
  7. Thoroughly combine cream cheese, greek yogurt and sweetener in a small bowl.
  8. Next add in your blueberries
  9. Note: You can either leave the blueberries whole, or blend everything together. Both taste great!
  10. Spread the frosting over each pancakes and enjoy!
