Mexican Brown Rice Stuffed Bell Peppers

For those of you who’ve never had stuffed peppers before, you’re missing out! The funny thing is, I’m not even that huge of a bell pepper fan, but I ADORE these. I can’t think of a better (and more healthy) way to spice up my rice than this!

Lets face it, rice can get boring after a while. Luckily, with the addition of some spices and a nice oven to let all the flavors meld together, you have yourself a winning solution.

Healthy Mexican Brown Rice Stuffed Peppers

So what makes this recipe different? Well, there are a lot of stuffed bell pepper recipes out there, but this one has all those incredible Mexican flavors and is healthy (even without gobs of cheese added like most). On top of that, the bright colors and easy prep make this a great healthy side dish when you have company over!


Mexican Brown Rice Stuffed Peppers

Prep Time: 15 minutes

Cook Time: 30 minutes

Total Time: 45 minutes

Yield: 4 stuffed peppers

Serving Size: 1 stuffed pepper


  • 4 bell peppers
  • 2 cups of cooked brown rice (I like to get this from the frozen section at Trader Joes so it's ready to go!)
  • 1/2 cup corn kernels (~68g)
  • 1/4 cup canned black beans, rinsed (~63g)
  • 1/4 cup diced tomatoes
  • 1/4 cup lite mexican style shredded cheese
  • 2 tbsp chopped fresh cilantro
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp chili powder
  • sea salt & pepper to taste


  1. Preheat oven to 350 degrees
  2. After washing bell peppers, remove top of pepper, stem and seeds.
  3. Place peppers, top up in a baking dish. Alternatively, you could use a parchment lined baking sheet, but using a dish will help the peppers remain upright.
  4. In a large bowl, mix all ingredients, adding spices last.
  5. Spoon mixture evenly into peppers
  6. Bake for ~30 minutes until baked through
  7. Enjoy right away =)
