For those of you who’ve never had stuffed peppers before, you’re missing out! The funny thing is, I’m not even that huge of a bell pepper fan, but I ADORE these. I can’t think of a better (and more healthy) way to spice up my rice than this!
Lets face it, rice can get boring after a while. Luckily, with the addition of some spices and a nice oven to let all the flavors meld together, you have yourself a winning solution.
So what makes this recipe different? Well, there are a lot of stuffed bell pepper recipes out there, but this one has all those incredible Mexican flavors and is healthy (even without gobs of cheese added like most). On top of that, the bright colors and easy prep make this a great healthy side dish when you have company over!
