Healthy Strawberry Cheesecake Pie with Dark Chocolate Drizzle

I’ve taken my favorite healthy cheesecake and turned it into a pie! With a beautiful topping of fresh strawberries and blueberries, this makes the perfect 4th of July dessert (without wrecking your diet)! Plus, who can say no to chocolate, fruit AND cheesecake all at once?!

You may also choose to omit the crust altogether, and make your more traditional cheesecake versus a cheesecake pie, but i have to say the golden graham cracker crust really adds something special to this recipe. (Note: You’ll need to use a spingform pan if omitting the crust)

This is my go-to dessert when I want to bring something special to a potluck or get together. Everyone is always shocked when they find out it’s healthy and has no sugar added! Plus, it’s absolutely gorgeous. Hope you give this healthy cheesecake a try for your 4th of July celebration!

Healthy Strawberry Cheesecake with Dark Chocolate Drizzle

Yield: 8 slices

Serving Size: 1 slice


  • 1 graham cracker pie crust
  • 2 - 8oz blocks of low fat cream cheese (Neufchâtel cheese would also work), room temperature
  • 2/3 cup xylitol or sweetener of choice
  • 2 tsp vanilla extract
  • 1/3 cup non-fat greek yogurt
  • 2 extra large eggs, room temperature
  • 1 egg white, room temperature
  • 1 tbsp cornstarch (flour would also work)
  • 4 large strawberries, fresh
  • 1/8 cup fresh blueberries, slices
  • 19 grams dark chocolate


  1. Preheat oven to 325 degrees
  2. In a large bowl, combine your cream cheese, xylitol, vanilla extract, greek yogurt, eggs, egg white and cornstarch with an electric whisk
  3. Pour mixture into pie crust
  4. Bake for 40-45m, or until center is slightly jiggly and edges are firm at least 2" (note: the eyes of pie crust may begin to brown slight, this is another sign the cheesecake is done)
  5. Turn off oven, opening door and allowing to continue to cook for an additional 5 min
  6. Remove from oven and let cool completely on a wire rack (~30m)
  7. Refrigerate for at least 4 hours or overnight until firm
  8. Once firm, remove from fridge and top with fresh sliced strawberries and blueberries
  9. Melt 19 g of dark chocolate in microwave in 10 second intervals until melted. Careful not to burn!
  10. Spoon over cheesecake
  11. Refrigerate until you're ready to enjoy!
